filemaker - claris expert

I am familiar with filemaker. We need someone to set up a very customized platform for us to track our customers and interactions. This biggest issue is that we will have ongoing fields/topics that need to be entered. stupid example: today I am going to reach out to a group in my database and ask them if they want to paint my room. I need to keep track of who i asked, what I offered to pay them (will vary), what their response was, if they did the task, and the results.
then next week it may be some other task... asking people to do a specific video, etc etc etc.
Yes, we would like email integration, etc... but we need a simple process where we can have different screens and different layouts that are what I want to see while working on different tasks.
